Corn Moussaka


Here is an easy and quick supper for the family.  It has wonderful flavor and can be paired with a simple vegetable or salad and you have a tasty meal for the family dinner hour. Try it!  You're sure to like it!



Corn Moussaka

To feed a family of 6
  
17 oz. cans (3-3 1/2 cups) whole kernel corn drained
2 ½ -3 lbs of ground beef or turkey
2 tab. Whole wheat flour
2    8 oz. cans tomato sauce
1 tsp. garlic salt
½  heaping tsp. cinnamon
4 eggs, slightly beaten
3 cups cream style cottage cheese with chives, drained.
If cottage cheese with chives is not available in your area, you may use 2 % cottage cheese and dice 1 tablespoon fresh chives into your mixture.
½ cup grated Parmesan cheese
2 cups shredded Mozzarella cheese


Spread corn in an ungreased 9X13 glass baking dish.  Brown ground beef or turkey and drain.  Add flour and cook…stir for 1 minute.  Stir in tomato sauce, garlic salt and cinnamon.   Pour over corn in dish.   Bake at 350 degrees for 15 minutes.

Meanwhile:  combine eggs and cottage cheese, then spread over meat mixture. 
Top with Parmesan and Mozzarella cheese.  Bake 15 minutes more.

Let set for 10 minutes before serving.   Enjoy!
