Vegetable Turkey Wrap Recipe

Shared by Rachael Coe

I recently saw a recipe for cucumber turkey wraps so I decided to take this idea and add more veggies to it.  By adding the veggies in here, not only does it look pretty but I am able to successfully get my kids to eat raw veggies rather than just cooked ones.  What a great lunch this has become.

Vegetable Turkey Wrap Recipe

Ingredients
1 package of cream cheese (3 ounces) at room temperature
1 package of ranch season (8 ounces)
1 large carrot, grated
2 tbs of chopped olives
1/4 cup of diced cucumber
1/4 cup of chopped broccoli florets (I chopped these really small)
Thinly sliced turkey
4 Large flour tortillas

Directions:

In a mixer using the whisk attachment, combine the cream cheese and ranch seasoning until thoroughly combined.  Add all vegetables and whisk together until combined.  Spread your vegetable soread over a flour tortilla, lay your thinly sliced turkey on top of the spread, roll tortilla, and slice into 1 inch pieces.  Refrigerate for about 2 hours or until chilled then serve.

Serve with fruit for a meal that has something from every food group.
