Tis’ The Season…

It’s garden time and the bounty is plentiful! Here is a scrumptious, quick meal for the vegetable loving family. We enjoyed this dinner tonight and were well satisfied with the wonderful flavors it provided.

Try this with an ear of corn on the cob on the side and you will be coming back for more. It’s a truly guilt free meal!


Garden Vegetable Medley

Sauté 1 small onion (diced) and 4 large garlic cloves (minced), in a pan with 3 tab. Olive oil. Chunk up 1 large or 3-4 small zucchinis (or more) and add to the olive oil, onion and garlic. Salt and pepper to your taste and add 1 tab. Italian seasoning along with 1 tsp. Garlic Pepper Blend. Continue to sauté and turn the vegetables.

An optional but tasty add in: Wash and dice 1 cup of fresh baby bok choy (yu choy), from an Asian Store. Sauté with the zucchini mixture.

Last: Add 1 ½ - 2 cups of halved grape tomatoes. Simmer a few more minutes and add a bit more salt and pepper to your taste.

Serve on a small platter and garnish the top with fresh shredded parmesan cheese.

Serve with an ear of corn or garlic bread.
