ANOTHER WONDERFUL USE FOR THAT SUMMER TIME ZUCCHINI

Every summer, I love to come up with new recipes for the prolific zucchini! You will never starve with “Mr. Zucchini” around! Here is one I made up this summer. Enjoy!



Southwestern Zucchini Casserole


1 lb. hamburger or turkey burger
1 pkg. taco seasoning of your choice (I prefer Taco Bell or Ortega)
1 very large zucchini or 3-4 med/small
1 med. Onion
4 large cloves of fresh garlic
Salt to your taste
Fresh ground pepper…to your choice (I like more rather than less)
1 tsp. Garlic pepper blend
1 tab. Italian seasoning of your choice
1/3 cup fresh grated Parmesan cheese


Fry and drain 1 lb. of hamburger or turkey burger. Add 1 pkg taco seasoning to the meat, simmer and set aside.

Slice the zucchini into larger chucks or halves.

In a large fry pan, add the olive oil, diced onion and crushed garlic cloves. Sauté till tender. Add zucchini to the onions and garlic and sauté for about 8-10 or just until crisp tender. Do not let them get to the soggy stage.

Add meat mixture to the zucchini. Gently stir together and place into a 9X13 glass baking dish. Sprinkle the fresh Parmesan cheese on top and bake in a 325 degree oven for 10-15 min.

Serve with a salad or your favorite bread or both.
