Parmesan Chicken Topped With Bruschetta

3 chicken breasts
1 cup Italian dressing
1 cup flour
2 Tbs Italian seasoning
2 Tbs garlic powder
1/2 tsp salt
1/2 tsp pepper
3 Tbs graded Parmesan cheese
2 Tbs olive oil
2 roma tomatoes
1/2 onion
2 Tbs fresh basil
1 Tbs shredded Parmesan cheese
1 pressed garlic clove

Place chicken breasts and Italian dressing in a plastic bag to marinade.

After you have marinated your chicken, combine the flour, Italian seasoning, garlic powder, pepper, salt, and parmesan cheese in a bowl and mix well.

Remove the chicken from the marinade and roll it in the flour mixture. Be sure to coat all of the chicken.

Place the olive oil in a pan on med-high heat. When the oil is hot, place the floured chicken in the pan to brown both sides.



While the chicken is cooking you can make your bruschetta.  Chop the tomatoes and place into bowl. Dice the onions into small pieces and add to the tomatoes. Add your basil, pressed garlic clove, and Parmesean cheese and toss.

Set the bruschetta aside. Heat oven to 450 degrees.

Once the chicken is cooked to 160 degrees or the fluids run clear, place it on an oven safe platter. Then spoon the bruschetta on top of the chicken and place in the oven to melt . It will take approximately 15 min.



Another way to make this meal on a budget is to use spaghetti sauce instead of the bruschetta. I will often make it with the spaghetti sauce and serve over noodles. To do this you just cool the noodles while the chicken is cooking and remove the step where you make the bruschetta.
