With school back in season and everyone rushing to one event after another, there is little time left to cook great healthy meals. One of my favorite appliances in my kitchen is my slow cooker, because I can have healthy meals for my family in just a matter of minutes. This month's recipe will require only ten minutes of your time to prepare and is healthy and delicious!
Pull Apart Chicken
(this recipe serves four so you may want to double it if you have a larger family)
Ingredients:
3/4 lb. boneless, skinless chicken breast (2 to 3 large)
1/2 cup water
1 tsp. vinegar
1/2 tsp. onion powder
1 tsp minced garlic
1 tsp. Italian Seasoning
1 tsp. sugars
1/2 tsp. celery salt
4 hamburger buns
Directions:
Well ahead of preparation time, place the chicken and the rest of the ingredients (except the hamburger buns of course!) in the slow cooker. Cover and cook on low for 8 to 10 hours. During the last 2 hours of cooking, use a fork to break apart the chicken into strands. The longer it cooks, the easier it is to shred the meat apart.
Spoon over hamburger buns and serve. (We have also served this over rice or in a tortilla shell - both are delicious.)
Ranch Garden Fresh Vegetables
Ingredients:
1 large zucchini (quartered)
1 small squash (sliced)
1 cup cherry tomatoes (halved)
1/4 cup Olive Oil
1 tsp ranch seasoning
1/2 tsp dill weed
Directions
Place your olive oil, zucchini, and squash in a frying pan on medium heat. Add ranch and dill weed. Cook until veggies are tender. Add your cherry tomatoes and cook just until all is heated. Serve and enjoy!
